Hello all!!

I’ve been pretty busy with school lately so I haven’t had a chance to do my usual weekly baking! However, I’ve been home for Easter break so I thought I’d make something fun and easy for the Easter season! I found these cute little pretzel snacks on Pinterest and you can find the original link here:

This recipe calls for some different things than I used, like square pretzels and resse’s mini eggs. I just made due with what was available at my local grocery store so I went with regular pretzels, almond bark, and Easter peanut and peanut butter M&M’s. It would work with any small chocolate candy, but the pastel colors are a must!!

So really all you need to do is set out some waxed paper, line up your pretzels and melt your almond bark. Once you have it all laid out, just go to work spooning on about a teaspoon of almond bark and sticking your candy on top. You’ll want to do it one at a time so your “egg” will stick into the almond bark. After the almond bark is hardened, these things are ready to eat!

So I’ve seen that pillsbury commercial on TV about a hundred times it seems like about unsloppy joes. They appeared to be really easy to make with the only ingredients being biscuits, hamburger, sloppy joe mix, and cheese. So I decided to take it on!! I was really happy with the results and it made a hearty, delicious, and filling meal. The recipe I used from Pinterest can be found here:

This recipe is seriously SO easy. All you have to do is brown up your hamburger, add your sloppy joe mix, flatten out your biscuits, pile on the the meat and cheese, fold ’em over, and stick them in the oven!! Quick, easy, and delicious.

Now, I did everything to same on this recipe except for the grands biscuits. I grabbed the biscuits before I looked at the recipe and saw that I was supposed to use grands. So I ended up just using regular sized biscuits, but they still turned out really well!! The individual unsloppy joes were a lot smaller and were kind of hard to close up for baking, but the smaller size would honestly be perfect for an appetizer at a football watching party or tailgate. The grands biscuits would definitely be better for a sit down meal, but regardless these things were delicious and easy to make!!

Hey there everyone!!

I have another quick and easy recipe to share with you all today. I was meaning to make no bake cookies when my oven didn’t work, but I never did. So I made these last week with my tater tot casserole and they were gone so fast that I made them again this week!! I’m pretty sure I found the recipe on Pinterest at one point but I just took a screen shot with my phone rather than saving the link, so I’ll share ingredients and directions on here–believe me, you’ll want to make these!!

Ingredients

2 cups white sugar

2 tablespoons butter or shortening

2 tablespoons cocoa

1/2 cup milk

1/4 teaspoon salt

1/2 teaspoon vanilla

3/4 cup peanut butter

2 cups quick oatmeal

wax paper or tin foil

Directions

1. Mix sugar, shortening, cocoa, and milk in a saucepan and bring to a boil

2. Remove from heat

3. Add salt, vanilla, and peanut butter

4. Mix until peanut butter is dissolved

5. Quickly add oatmeal and stir

6. Drop from spoon onto foil or wax paper

7. Let cool and harden before eating

8. Store in an airtight container and enjoy!!

Back when I was in high school, one of my good friend’s mom always made this super delicious poppy seed chicken casserole. It was always super popular if we ate at her house, and then her mom started working at my school and they started making it for one of our lunches! This was pretty excited for us because honestly, this casserole was SOOO good.

So obviously now that I’m cooking for myself, I had to find a recipe for it! I’ve made it several times and it’s a hit!! I made it tonight for supper actually, but cut the size of all the ingredients down a little and made it in a 9×9 pan instead of 13×9. You can find the link for the recipe here:

Now that my oven is working again, I’m pretty excited about using it to make meals once again. After talking to my boyfriend and one of his friends, I decided that I needed to make some tater tot casserole. I’d only made this dish one other time and that was during fall semester. I liked the way it turned out that time, but I struggled to find a recipe that I wanted to use because there were so many different versions on Pinterest. I followed a recipe pretty close the first time and used frozen green beans as my vegetable.

This time, I decided I would kind of make up the recipe as I went along. My boyfriend’s mom uses peas in her casserole and I had also heard of people putting corn in it, so I decided to try both of those and I really liked the way it turned out!! I didn’t really use definite measurements on anything so I’ll just share my general directions and ingredients of this dish!

Ingredients:

1 lb ground beef

1 32 oz bag frozen tater tots

1-2 cups of cheddar or co-jack cheese

1 can “cream of…” soup of your choice (I used mushroom, celery or chicken will work fine too)

1 heaping serving spoonful of sour cream

1 bag frozen peas (or green beans)

1 bag frozen corn

assorted spices (minced onion, garlic powder, salt, pepper)

Directions:

1) Preheat oven to 350 degrees F

2) Lightly grease 13×9 inch pan

3) Brown hamburger in large skillet; drain

4) Remove from heat and add can of soup and sour cream

5) Add spices of your choice and stir

6) Stir in about 1/2 bag of corn (use your best judgement)

7) Spread meat mixture in bottom of pan

8) Layer peas over meat (feel free to use as much or as little as you like)

9) Sprinkle cheese over peas (don’t be shy–the cheesier, the better!)

10) Layer tater tots over the cheese (I have OCD and make sure my tots are perfectly in line, but it really doesn’t matter)

11) Bake for 25-30 minutes–until tots are golden and cheese is melty!

12) Dish up a large helping and enjoy! 🙂

Valentine’s Day Blondies

So I’ll start this particular post off with some really exciting news….THE OVEN IS FIXED!!! I’m so happy I don’t even know what to do with myself. AND, I’ve been so busy this week that I’ve only had the opportunity to use it once. Pretty sad, but I have approximately eight hundred new recipes I want to try that require an oven so I’m sure I’ll be getting on that soon! My main reason for using the oven was to brush up on my baking skills. It had been so long I got concerned I’d lost my touch ( YIKES!!!). So in honor of Valentine’s Day, I decided to make my sweetheart some blondies with Valentine M&Ms in them. I’d found this recipe on Pinterest a while back and honestly you could use different colored M&Ms in these things for any occasion!

I’ve never made blondies or from-scratch brownies before so honestly I think I went about making these a little bit incorrectly. Wherever it said “mix” in the recipe I used a hand-mixer, but I’m pretty sure you’re just supposed to stir the ingredients together. Beat the egg before adding it in. The consistency of this batter was just like a brownie batter only the color of brown sugar and for whatever reason I was expecting more of a dough, like if they were cookies bars. So I was a little confused by that, but it all turned out! I also accidentally spilled some extra vanilla in there, but they still tasted really good so I’m not too concerned about that! If you go to the link of the recipe, you’ll see these blondies looking super cute with the M&Ms baked perfectly on top of the bars…my M&Ms definitely sunk into the batter while they were baking so part of me wonders if you’re not supposed to sprinkle the M&Ms over the top until they’ve been baking for at least 10 minutes. But like I said, they tasted delicious, regardless of the fact that the M&Ms were sunken.

I really liked these blondies and my boyfriend did too and since the oven is back in commission, I’ll probably be making some more soon!

Crockpot Beer Chicken

Beer Chicken!

Tonight I tried a new recipe called crockpot beer chicken. The house I’m currently living in has been without a functional over for over a month (I can’t bake so I’m dying) so I’ve had to get a little creative in order to have a hot meal. This particular recipe was super easy to make. Basically all I did was take 6 chicken legs and put them in my crockpot. I used legs because they’re my favorite, but the recipe said you could use breasts, thighs, or even a whole chicken! So after putting the legs into the crockpot, I poured a Busch Light over them. Then I seasoned them a little bit with salt, pepper, garlic powder, minced onions, chili powder, and basil. After cooking for about 3 and a half hours, these chicks were ready to be eaten. The meat was so moist and tender and the meat fell right off the bone! It was super easy to make and delicious. Next time, I think I’ll try marinading the chicken for a while before cooking it and using a different beer to give it some more flavor.
